Heirloom Tomato Bruschetta on Sweet Potato Toast (paleo/whole30)

INGREDIENTS

  • 1 large sweet potato, peeled and cut into 1/4 thick slices

  • 6-8 medium heirloom tomatoes, diced

  • 10 fresh basil leaves, shredded

  • 3 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar

  • 3 tsp minced garlic

  • salt/pepper, to taste

DIRECTIONS

  1. Pre-heat oven to 400F. In the meantime, carefully slice the sweet potato.

  2. On a baking tray, lay out sweet potato “toasts” and place in the oven for 20 mins. Flip over half way through.

  3. Combine the rest of the ingredients and toss well to combine. Chill till serving.
