Buffalo Chicken Salad (whole30/paleo)
INGREDIENTS
1 lb chicken, cooked and diced
1 head of lettuce, chopped
3 celery stalks, diced
1 medium carrot, thinly sliced
1 medium red onion, diced
compliant ranch
SAUCE
1/3 cup ghee
1/2 cup Franks hot sauce
1 tbsp apple cider vinegar
1/2 tsp paprika
1 tsp cayenne pepper (add more for spice)
DIRECTIONS
Combine all sauce ingredients and toss diced chicken in it.
Place lettuce, celery, red onion and carrots on a plate and top with buffalo chicken.
Drizzle with a compliant ranch.
