Sweet Potato Shepherds Pie (whole30/paleo)
INGREDIENTS
MASHED POTATOES
x4 medium sweet potatoes, chopped in quarters
2/4 cup almond milk
2 tsp minced garlic
4 tsp ghee
salt/pepper to taste
FILLING
1 lb beef
2 tbsp tomato paste
1/2 cup broth
1 cup frozen peas
1 cup celery, diced
1 medium onion, diced
2 tbsp coconut aminos
Salt/pepper
DIRECTIONS
Heat a pot with enough water to cover the potatoes till it starts to boil. Place potatoes in pot, uncovered for about 10 mins till softened.
Drain potatoes and place them back in the pot. Mash them and then add the almond milk, garlic, ghee and season with salt/pepper, stir to combine. Set aside.
Pre-heat the oven to 375F.
Bring a pan to medium/high heat with avocado oil. Add diced onion and celery, cook till browned.
Add beef and make sure to break it up into smaller pieces. Let each side brown, then flip.
Add tomato paste and stir well combine.
Add peas, broth and coconut aminos. Bring to a simmer for 10 mins to let the flavors combine.
In a baking dish, layer the meat on the bottom then the sweet potato mash on top. Bake for 15 mins.
Feel free to serve with nutritional yeast on top for that “cheesy” flavor!
