Chickpea Rice Caprese Salad (vegan/gluten-free)
INGREDIENTS
1 cup chickpea rice
3/4 cup grape tomatoes, cut in half
3/4 cup diced cucumbers
handful of greens (I like arugula)
half red onion, diced
1 tbsp EVOO
4 tbsp balsamic vinegar
DF mozzarella, to top
salt/pepper, to taste
DIRECTIONS
1. Cook rice according to package directions, let it cool.
2. Combine all ingredients and add rice.
3. Refrigerate till chilled.
